Everyone needs a delectable cake recipe up their sleeves, whether it is for yourself or friends and family. This one is adapted from one of Nigella Lawson's classics and one that I have been making for years!
INGREDIENTS
4 mandarins or satsumas
200g ground almonds
200g sugar
3 eggs
1 tsp baking powder
100g dark chocolate
1 tbsp cocoa powder
RECIPE
Put the mandarins or satsumas in a pan and cover with hot water. Bring to the boil and boil for 45 minutes. Allow to cool.
In the meantime, break up the chocolate in a glass bowl and heat slowly over a Bain Marie to melt.
Preheat the oven to 180c/350f/Gas mark 4.
Blitz the softened satsumas or mandarins in a food processor with the eggs and sugar.
Add the melted chocolate, ground almonds, baking powder and cocoa powder.
Line a baking tray (around 20cm x 16cm) with baking paper and pour in the cake mix.
Bake for 30 minutes - test with a skewer around 25 minutes to see whether it is cooked through.
When baked through (a skewer should come out clean), allow to cool before cutting into shapes with a cookie cutter or squares.
